Ingredients:
1 lb ground turkey
28 oz can of crushed tomatoes
1 15 oz can black beans (drained and rinsed)
1 15 oz can kidney beans (drained and rinsed)
1 15 oz can of whole kernel corn (drained and rinsed)
2 cups low sodium chicken broth
4 oz can of green chili’s
1 small, chopped yellow onion
3 minced garlic cloves
1 packet taco seasoning
Juice of 2 limes
1 tablespoon olive oil
Directions:
Heat olive oil in pot on medium heat, and add the onion. Stir for about 2 min, then add garlic and stir for another 2 min. Then add the turkey, browning it until fully cooked. Add the rest of the soup ingredients and turn down to a simmer. Cover and let simmer for 30 min. That’s all! I like to top mine with cilantro and avocado.
