Ingredients:
2 heads bok choy (very roughly chopped)
6 oz rice noodles
5 ½ cups low sodium chicken broth or vegetable broth
8 oz sliced Baby Bella mushrooms
1 bunch of green onions (chopped, greens and whites divided)
3 shallots (diced)
4 cloves garlic (minced)
2 tablespoon fresh grated ginger
2-3 tablespoon soy sauce
2 star anise
1 tablespoon olive oil
Optional for topping: red pepper flakes and sesame seeds
Directions:
Heat the olive oil on medium heat in a large pot. Add the shallots, stirring constantly until they soften. Then add the garlic, ginger, and white part of the green onion. Cook for 2 min, then add the broth and bring to a simmer. Add the star anise and soy sauce, then cover the pot and let simmer for 15 min. Remove the star anise and discard, then add the noodles, mushrooms, and bok choy and simmer for 8 min (or until noodles are at desired consistency). Serve the soup and garnish with the green part of the green onion, sesame seeds, and red pepper flakes!
