Ingredients:
1 cup cauliflower rice
1 egg
¼ cup chopped carrots
¼ cup peas (I used celery in this picture and really like it also!)
1 tablespoon finely chopped ginger (or, a touch of ginger😉)
2 cloves minced garlic
¼ cup shallot whites
¼ cup shallot greens
1 tablespoon olive oil
½ teaspoon sesame oil
Chopped peanuts for garnish (optional)
Directions:
Scramble egg and set aside. Heat the olive oil on medium heat, then add Garlic, shallot whites, and ginger. Mix consistently until golden brown. Then, add in the cauliflower rice and soy sauce, stirring for about 3 minutes. Add in the carrots and peas, continuing to stir for another 3 min. Stir in the egg, sesame oil, and scallion greens. Add peanuts if you decide to use them.
