These fritters are filled with sweet potato and zucchini, and I have yet to make them for someone who didn’t lick their plate! They’re a perfect way to get your veggies in a fun and delicious way!
Ingredients:
Grated sweet potato
Grated zucchini
Bread crumbs (I used whole wheat)
Eggs
Scallions (green and white part)
Garlic
Oil
Pepper
Seasoning salt
Red pepper flakes to taste
Plain Greek yogurt
Lemon
Dijon mustard
Sweet Potato Fritters
Sweet potato and zucchini fritters, pan fried to perfection to give it the perfect crispy outer layer!
Ingredients
Fritters:
- 1 cup grated sweet potato
- ½ cup grated zucchini
- ½ cup bread crumbs I used whole wheat
- 2 eggs
- ⅓ cup scallions chopped
- 2 garlic cloves minced
- 1 tablespoon cooking oil of choice I use EVOO
- Pepper seasoning salt, and red pepper flakes to taste
Dip:
- ¼ cup plain Greek yogurt
- zest of ½ a lemon
- 1 teaspoon Dijon mustard
Instructions
- Mix together the fritter ingredients (except oil).
- Preheat oil on a pan on medium heat.
- Form mix into patties (size is your choice) and put on pan until pan side is golden brown and flip.
- Do the same to the other side.
- Mix together the dip ingredients and you’re ready!
