Ginger Sesame Bok Choy

This recipe is quick, delicious, and easy. You’ll look forward to eating your vegetables every time with this recipe! Take care not to overcook the bok choy, you still want the crunchiness of the white parts.

Ingredients
  

  • 3 heads baby bok choy or 1 head regular bok choy
  • 4-6 garlic cloves minced
  • 1 tablespoon soy sauce regular or low sodium
  • 2 teaspoon olive oil
  • 1 teaspoon ginger grated
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • Red pepper flakes to taste
  • Optional: sesame seeds for garnish

Instructions
 

  • Mix together the soy sauce, sesame oil, red pepper flakes, and rice vinegar. Set aside.
  • Heat the olive oil on a medium saucepan. Sauté the bok choy, ginger and garlic for 2-3 minutes.
  • Add in the sauce, stirring and simmering for 2-3 more minutes, until bok choy is at your desired consistency.
  • Remove from heat and garnish with sesame seeds if using. Serve.
