Preheat oven to 350.
Mix together all crust ingredients until dough is formed.
Line a 13x9 baking pan with parchment paper and then press the crust firmly into the bottom of the pan. Make sure the crust is even.
Place in the oven until the edges of the crust are golden brown, about 20 minutes.
While the crust is baking, mix together the sugar and lemon zest.
Sift in the flour before mixing in the lemon juice and eggs.
When the crust is done, pierce all over with fork (not all the way through, about halfway). This will help the filling stick.
Pour the filling over the crust, and put back in oven for 20-25 min, until the center is no longer jiggling.
Let cool for at least 2 hours.
Once cool, sprinkle with powdered sugar through a mesh strainer and cut into squares!
