Glazed Lemon Poppyseed Muffins

These muffins are filled with lemon flavor and have the perfect balance of poppyseeds. The lemon glaze on top is the perfect touch!

Ingredients
  

For Muffins

  • 2 cups all-purpose flour
  • 2 tablespoon poppyseeds
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ cup butter, softened 1 stick
  • 2 eggs
  • ½ cup nonfat plain greek yogurt
  • ¼ cup milk of choice I use unsweetened almond milk
  • 2 tablespoon lemon juice
  • 1 ½ teaspoon vanilla
  • Zest of 1 lemon

For Glaze

  • ½ cup packed powdered sugar add more to make thicker
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat oven to 375 F
  • In a bowl, sift together the flour, poppyseeds, sugar, baking powder, and baking soda.
  • In a separate bowl, mix together the butter, eggs, yogurt, milk, lemon juice, lemon zest, and vanilla.
  • Slowly mix the flour mixture into the butter mixture, and mix slowly until completely blended.
  • Pour mixture evenly into a 12 muffin tin.
  • Bake for 15-20 minutes, until you can insert a toothpick and it comes out clean.
  • Pull out the muffins and let cool.
  • While muffins are cooling, mix together the powdered sugar and lemon juice for the glaze.
  • Once muffins are cool, drizzle the glaze over the tops of the muffins. Add as much as you want and enjoy!
