Thai Chicken Thighs

Ingredients
  

  • 1 ½ lb boneless skinless chicken thighs
  • ¼ cup fresh cilantro chopped, packed
  • Thai basil chopped, packed
  • cup fish sauce
  • 2 green onions chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon packed brown sugar
  • 1 teaspoon fresh ginger grated
  • ¼ teaspoon pepper
  • Optional: 1-2 thai peppers chopped

Instructions
 

  • If cooking in the oven, preheat the oven to 425 F. If you’re grilling the chicken, preheat the grill to medium-high heat.
  • Mix together all of the ingredients in a large bowl except for the chicken.
  • Once mixed, add in the chicken and mix until the chicken is coated. Cover and let the chicken marinate for at least 2 hours, or up to overnight.
  • Uncover the chicken and drain the marinade.
  • Oven: Line a pan with foil and place a baking wrap on top. Place the chicken on the rack and cook for 25-30 minutes, until internal temperature reaches 165 F. If you want the chicken to have extra crisp, broil for a couple minutes.
  • Grill: Place the chicken on the grill and cook for about 10 minutes, until the internal temperature reaches 165 F.
