Thai Chicken Thighs

- 1 ½ lb boneless skinless chicken thighs
- ¼ cup fresh cilantro chopped, packed
- ⅛ Thai basil chopped, packed
- ⅛ cup fish sauce
- 2 green onions chopped
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 tablespoon lime zest
- 1 teaspoon packed brown sugar
- 1 teaspoon fresh ginger grated
- ¼ teaspoon pepper
- Optional: 1-2 thai peppers chopped
If cooking in the oven, preheat the oven to 425 F. If you’re grilling the chicken, preheat the grill to medium-high heat.
Mix together all of the ingredients in a large bowl except for the chicken.
Once mixed, add in the chicken and mix until the chicken is coated. Cover and let the chicken marinate for at least 2 hours, or up to overnight.
Uncover the chicken and drain the marinade.
Oven: Line a pan with foil and place a baking wrap on top. Place the chicken on the rack and cook for 25-30 minutes, until internal temperature reaches 165 F. If you want the chicken to have extra crisp, broil for a couple minutes.
Grill: Place the chicken on the grill and cook for about 10 minutes, until the internal temperature reaches 165 F.
