12ozandouille sausagehalved and sliced into ¼-1/2" slices

2russet potatoes

Instructions
In a large pot on medium heat, brown the sausage. Remove sausage from pot and put to the side. Leave enough oil from the sausage in the pan to coat the bottom.
Add carrots, celery, bell pepper, onion, and garlic. Cook, stirring occasionally, until tender (about 10 minutes).
Add flour and spices (Cajun seasoning, smoked paprika, salt, pepper, and if using cayenne). Stir to coat the veggies.
Add potatoes, stir until potatoes are also coated with spices. Then, add chicken broth.
Bring to a simmer and cover until potatoes are tender/easily pierced with a fork (15-20 minutes)
Add back in browned sausage and stir to combine. Add more salt and pepper to taste. Serve!
