Cajun Soup (Andouille Sausage and Potato)

Ingredients
  

  • 12 oz andouille sausage halved and sliced into ¼-1/2" slices
  • 3 medium carrot diced
  • 2 rib celery diced
  • 1 bell pepper diced
  • ½ onion diced
  • 4-6 garlic cloves minced
  • 6 tablespoon all-purpose flour
  • 2 teaspoon Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne optional - adds spice
  • ½ teaspoon pepper
  • ¼ teaspoon salt
  • 2 russet potatoes
  • 6 cups broth

Instructions
 

  • In a large pot on medium heat, brown the sausage. Remove sausage from pot and put to the side. Leave enough oil from the sausage in the pan to coat the bottom.
  • Add carrots, celery, bell pepper, onion, and garlic. Cook, stirring occasionally, until tender (about 10 minutes).
  • Add flour and spices (Cajun seasoning, smoked paprika, salt, pepper, and if using cayenne). Stir to coat the veggies.
  • Add potatoes, stir until potatoes are also coated with spices. Then, add chicken broth.
  • Bring to a simmer and cover until potatoes are tender/easily pierced with a fork (15-20 minutes)
  • Add back in browned sausage and stir to combine. Add more salt and pepper to taste. Serve!
