Ingredients

- Andouille sausage
- Russet potatoes
- Bell pepper
- Carrots
- Celery
- Onion
- Garlic
- Chicken broth
- All purpose flour
- Cajun seasoning
- Smoked paprika
- Pepper
- Salt

Instructions

- Step 1: In a large pot on medium heat, brown the sausage (not pictured). Then, remove from pan and set aside, leaving the sausage fat behind. Add the bell pepper, carrots, celery, onion, and garlic. Cook, stirring occasionally, until tender.

- Step 2: Add flour and spices, stir to coat vegetables. Make sure flour is completely incorporated before going to next step.

- Step 3: Then, add potatoes and stir to coat. Add chicken broth. Bring to a simmer until potatoes are tender/easy to pierce with a fork (about 15-20 minutes).

- Step 4: Lastly, add back in the Andouille sausage and stir to combine. Serve and enjoy!
Substitutions
- Gluten free - Use a gluten free all-purpose flour to make this recipe completely gluten-free
- Vegetarian/Vegan - Use a plant-based sausage substitute to make this recipe vegan/vegetarian! It's best to try to find a "smoked" one to replicate the smoky flavor that Andouille sausage gives.
- Dairy free - This recipe is already dairy free!
Variations
- Spicy - Add the cayenne (listed as optional in recipe) for a spicier Cajun soup!

- In a large pot on medium heat, brown the sausage. Remove sausage from pot and put to the side. Leave enough oil from the sausage in the pan to coat the bottom.
- Add carrots, celery, bell pepper, onion, and garlic. Cook, stirring occasionally, until tender (about 10 minutes).
- Add flour and spices (Cajun seasoning, smoked paprika, salt, pepper, and if using cayenne). Stir to coat the veggies.
- Add potatoes, stir until potatoes are also coated with spices. Then, add chicken broth.
- Bring to a simmer and cover until potatoes are tender/easily pierced with a fork (15-20 minutes)
- Add back in browned sausage and stir to combine. Add more salt and pepper to taste. Serve!
