Chocolate Peanut Butter Granola

- 3 cups old-fashioned oats
- 1 cup de-shelled peanuts
- ½ cup chocolate chips semi-sweet or dark chocolate
- ½ cup smooth natural peanut butter
- ¼ cup honey or maple syrup
- ½ teaspoon vanilla
- ½ teaspoon cinnamon
Preheat oven to 350.
Mix the oats, peanuts, and cinnamon in a bowl.
In a separate microwave safe bowl, add the peanut butter and honey (or syrup). Microwave in 10 second increments until the peanut butter and honey are a more liquid consistency. Mix together the and pour over the oat mixture, combining until the oats are coated.
Place this mixture on a parchment paper lined baking sheet and spread out over sheet. Bake for about 20 min (until golden brown).
Let cool completely and mix in the chocolate chips.
