Oatmeal Breakfast Cookies
These healthy breakfast cookies are such a great thing to have on hand when you’re in a rush. Grab them when you’re on the go and know you’re getting a healthy and filling breakfast or snack!

- 1 cup old-fashioned oats
- 1 cup unsweetened applesauce
- 1 cup dried cranberries
- ½ cup nut butter of choice
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon salt
Preheat oven to 350.
Mix all ingredients together until evenly distributed.
Scoop cookie dough onto a parchment paper lined baking sheet using a ¼ cup.
Flatten into cookie shape (cookies will not spread in oven).
Bake for 15-20 minutes, until edges are golden brown.
Remove from oven, let cook, and enjoy!
