These healthy oatmeal breakfast cookies are such a great thing to have on hand when you’re in a rush. Grab them when you’re on the go and know you’re getting a healthy and filling breakfast or snack.
Ingredients:
Old-fashioned oats
Unsweetened applesauce
Dried cranberries
Nut butter of choice
Honey or maple syrup
Vanilla
Salt
Cinnamon
Directions
Place all ingredients in a large bowl.
Mix together all ingredients until evenly distributed.
Scoop dough using a ¼ cup measuring cup onto a parchment paper lined baking sheet. Press down (cookies won't spread in oven).
Bake until edged are golden brown. Remove breakfast cookies from oven and let cool.

- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon salt
Instructions
- Preheat oven to 350.
- Mix all ingredients together until evenly distributed.
- Scoop cookie dough onto a parchment paper lined baking sheet using a ¼ cup.
- Flatten into cookie shape (cookies will not spread in oven).
- Bake for 15-20 minutes, until edges are golden brown.
- Remove from oven, let cook, and enjoy!
