Roasted Tomato and Mozzarella Toast with a Honey Dijon Vinaigrette

The title really says it all. Put this roasted tomato mixture on a toasted piece of delicious, crusty bread and enjoy!

Ingredients
  

  • 1 pint (10 oz) cherry tomatoes halved
  • 4 cloves garlic roughly chopped (or minced if you don't like large chunks of garlic)
  • 1 tablespoon Olive oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 2 oz fresh mozzarella ripped into bitesize pieces
  • cup basil thinly sliced, loosely packed
  • crusty bread sliced, toasted

Honey Dijon Vinaigrette

  • 1 tablespoon balsamic vinegar
  • ½ tablespoon olive oil
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon honey

Instructions
 

  • Preheat oven to 400F.
  • Toss together the tomatoes, garlic, olive oil, salt, and pepper.
  • Place the cherry tomato mixture on a parchment paper lined sheet pan in a single layer.
  • Bake for 15-20 minutes.
  • While tomatoes are in the oven, mix together the vinaigrette ingredients.
  • Remove from oven and let cool for about 5 minutes. Then, mix in the mozzarella and basil
  • Drizzle the vinaigrette over the tomatoes and mix.
  • Salt and pepper to taste.
  • Serve over toasted bread.
