Roasted Tomato and Mozzarella Toast with a Honey Dijon Vinaigrette
The title really says it all. Put this roasted tomato mixture on a toasted piece of delicious, crusty bread and enjoy!

- 1 pint (10 oz) cherry tomatoes halved
- 4 cloves garlic roughly chopped (or minced if you don't like large chunks of garlic)
- 1 tablespoon Olive oil
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
- 2 oz fresh mozzarella ripped into bitesize pieces
- ⅛ cup basil thinly sliced, loosely packed
- crusty bread sliced, toasted
Honey Dijon Vinaigrette
- 1 tablespoon balsamic vinegar
- ½ tablespoon olive oil
- ¼ teaspoon Dijon mustard
- ¼ teaspoon honey
Preheat oven to 400F.
Toss together the tomatoes, garlic, olive oil, salt, and pepper.
Place the cherry tomato mixture on a parchment paper lined sheet pan in a single layer.
Bake for 15-20 minutes.
While tomatoes are in the oven, mix together the vinaigrette ingredients.
Remove from oven and let cool for about 5 minutes. Then, mix in the mozzarella and basil
Drizzle the vinaigrette over the tomatoes and mix.
Salt and pepper to taste.
Serve over toasted bread.
