Ingredients

Instructions

- Step 1: Preheat oven to 400F. Mix together the cherry tomatoes, garlic, olive oil, salt, and pepper.

- Step 2: Place the cherry tomato mixture in a single layer on a parchment paper lined baking sheet. Bake for 15-20 minutes.

- Step 3: Mix together vinaigrette ingredients.

- Step 4: Mix together the roasted tomato mixture, mozzarella, vinaigrette, and basil.

5. Step 5: Put on toast and enjoy!
Substitutions
- Vegan - use your favorite vegan mozzarella cheese alternative and sub your favorite vegan sweetener for the honey.
- Vegetarian - this dish is already vegetarian, enjoy!
- Gluten free - use a gluten free bread for the toast to make this recipe completely gluten free

- 1 pint (10 oz) cherry tomatoes halved
- 4 cloves garlic roughly chopped (or minced if you don't like large chunks of garlic)
- 1 tablespoon Olive oil
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
- 2 oz fresh mozzarella ripped into bitesize pieces
- ⅛ cup basil thinly sliced, loosely packed
- crusty bread sliced, toasted
Honey Dijon Vinaigrette
- 1 tablespoon balsamic vinegar
- ½ tablespoon olive oil
- ¼ teaspoon Dijon mustard
- ¼ teaspoon honey
Instructions
- Preheat oven to 400F.
- Toss together the tomatoes, garlic, olive oil, salt, and pepper.
- Place the cherry tomato mixture on a parchment paper lined sheet pan in a single layer.
- Bake for 15-20 minutes.
- While tomatoes are in the oven, mix together the vinaigrette ingredients.
- Remove from oven and let cool for about 5 minutes. Then, mix in the mozzarella and basil
- Drizzle the vinaigrette over the tomatoes and mix.
- Salt and pepper to taste.
- Serve over toasted bread.
