    This was inspired by my Tomato Basil Bruschetta on this site. This roasted tomato toast is a twist on classic tomato basil bruschetta, with even more flavor!

    Instructions

    Substitutions

    • Vegan - use your favorite vegan mozzarella cheese alternative and sub your favorite vegan sweetener for the honey.
    • Vegetarian - this dish is already vegetarian, enjoy!
    • Gluten free - use a gluten free bread for the toast to make this recipe completely gluten free

    Ingredients
      

    • 1 pint (10 oz) cherry tomatoes halved
    • 4 cloves garlic roughly chopped (or minced if you don't like large chunks of garlic)
    • 1 tablespoon Olive oil
    • ¼ teaspoon Salt
    • ¼ teaspoon Pepper
    • 2 oz fresh mozzarella ripped into bitesize pieces
    • ⅛ cup basil thinly sliced, loosely packed
    • crusty bread sliced, toasted

    Honey Dijon Vinaigrette

    • 1 tablespoon balsamic vinegar
    • ½ tablespoon olive oil
    • ¼ teaspoon Dijon mustard
    • ¼ teaspoon honey

    Instructions
     

    • Preheat oven to 400F.
    • Toss together the tomatoes, garlic, olive oil, salt, and pepper.
    • Place the cherry tomato mixture on a parchment paper lined sheet pan in a single layer.
    • Bake for 15-20 minutes.
    • While tomatoes are in the oven, mix together the vinaigrette ingredients.
    • Remove from oven and let cool for about 5 minutes. Then, mix in the mozzarella and basil
    • Drizzle the vinaigrette over the tomatoes and mix.
    • Salt and pepper to taste.
    • Serve over toasted bread.

      What in Italian Heaven is this vessel of flavor?! I took one bite into this and was immediately transported to an Italian villa. I enjoyed this with a few bottles of Red Wine and before you knew it I really thought I was in Italy!
