- *RECIPE NOTE: Different breads have different surface areas. If you have to spread the butter mixture very thin over the bread, make more of the mixture!
- 1 lb Italian, French, or sourdough loaf of bread I look for a flatter loaf, like a batard, for the best flavor
- 1 stick butter, room temperature
- 2 tablespoon mayonaisse yes, really! I promise it makes all the difference
- 2 tablespoon freshly grated parmesan
- 3 cloves garlic minced
- 1 tablespoon fresh basil minced
- 1 tablespoon fresh Italian parsley minced
- 1 tablespoon frech chives minced
- salt and pepper, to taste
- optional: red pepper flakes to taste
- 1 cup mozzarella shredded
Preheat oven on broil with a rack ~6" from heat
In a medium bowl, mix together the butter, mayo, parmesan, garlic, herbs, salt and pepper, and red pepper flakes (if using).
Slice the bread horizontally. Spread butter mixture evenly over bread, then sprinkle mozzarella over butter mixture.
Place in the oven on a baking sheet and watch closely. Remove when cheese is bubbling and golden, about 3-5 minutes.
Remove and enjoy! (Pro tip: Sprinkle some of the chopped fresh herbs on the bread for a prettier presentation)
