Ingredients

  • *RECIPE NOTE: Different breads have different surface areas. If you have to spread the butter mixture very thin over the bread, make more of the mixture!
  • 1 lb Italian, French, or sourdough loaf of bread I look for a flatter loaf, like a batard, for the best flavor
  • 1 stick butter, room temperature
  • 2 tablespoon mayonaisse yes, really! I promise it makes all the difference
  • 2 tablespoon freshly grated parmesan
  • 3 cloves garlic minced
  • 1 tablespoon fresh basil minced
  • 1 tablespoon fresh Italian parsley minced
  • 1 tablespoon frech chives minced
  • salt and pepper, to taste
  • optional: red pepper flakes to taste
  • 1 cup mozzarella shredded

Instructions

  • Preheat oven on broil with a rack ~6" from heat
  • In a medium bowl, mix together the butter, mayo, parmesan, garlic, herbs, salt and pepper, and red pepper flakes (if using).
  • Slice the bread horizontally. Spread butter mixture evenly over bread, then sprinkle mozzarella over butter mixture.
  • Place in the oven on a baking sheet and watch closely. Remove when cheese is bubbling and golden, about 3-5 minutes.
  • Remove and enjoy! (Pro tip: Sprinkle some of the chopped fresh herbs on the bread for a prettier presentation)
