Spicy Rotisserie Chicken Sandwich
A delicious and easy rotisserie chicken sandwich with a lettuce, pepperoncini, and red onion mixture tossed with red wine vinegar for the perfect zing!

- 1 ciabatta roll or bread of choice
- 2 tablespoon spicy mayo or try my healthier chipotle sauce
- ¾-1 cup shredded rotisserie chicken
- 1 cup shredded lettuce romaine or iceberg
- ¼ cup sliced pepperoncinis
- ⅛ red onion thinly sliced
- 1 tablespoon red wine vinegar
- dash of salt and pepper
- 1-2 slices pepper jack cheese depending on size of bread, you want all of the chicken covered with cheese
- 2 tablespoon chimichurri homemade or store bought
Slice roll horizontally and toast.
Spread spicy mayo on bottom piece of bread, then top with shredded chicken and pepper jack cheese.
Place piece of bread with chicken and cheese in oven or microwave until cheese is melted.
Mix the shredded lettuce, red onion, and pepperoncinis in a bowl. Toss with red wine vinegar. Salt and pepper to taste.
Top sandwich with lettuce mixture.
Spread chimichurri on the top slice of bread and close sandwich.
