This rotisserie chicken sandwich has so much flavor, it'll be a staple recipe for you! Packed with veggies that are tossed in red wine vinegar, it has the perfect bite.
This rotisserie chicken sandwich can be made year round, but given it's a no cook recipe I typically make it much more during those warmer months!
This was inspired by my veggie sandwich on this site, that spicy mayo and chimichurri combo is just elite.
Ingredients
- Ciabatta roll or bread of choice
- Rotisserie chicken
- Pepper jack cheese
- Shredded lettuce
- Red onion
- Pepperoncini
- Chimichurri (homemade or store bought)
- Spicy mayo (or try my healthier chipotle sauce)
- Red wine vinegar
- Salt and pepper

Instructions
- Step 1: Combine lettuce, pepperoncini, and thinly sliced red onion in a bowl and toss with red wine vinegar, salt, and pepper.
- Step 2: Spread spicy mayo on bottom piece of toasted bread.
- Step 3: Top with shredded rotisserie chicken.
- Step 4: Top chicken with pepper jack cheese and warm up in microwave or oven to melt cheese and warm chicken
5. Step 5: Top with lettuce mixture.
6. Step 6: Spread chimichurri on top piece of bread.
7. Step 7: Close sandwich and enjoy!
Hint: There's lots of the lettuce mixture in this sandwich, it's helpful to wrap it up with parchment paper to keep all the toppings inside.
Substitutions
- Dairy free - leave out the cheese for a dairy free sandwich
- Gluten free - use a gluten free roll or bread to make a gluten free rotisserie chicken sandwich
Variations
- Non-spicy - choose a cheese that is not spicy (provolone, cheddar, etc) and use regular mayo
- Other toppings - Tomato, avocado, pickled jalapeño

Spicy Rotisserie Chicken Sandwich
Ingredients
- 1 ciabatta roll or bread of choice
- 2 tablespoon spicy mayo or try my healthier chipotle sauce
- ¾-1 cup shredded rotisserie chicken
- 1 cup shredded lettuce romaine or iceberg
- ¼ cup sliced pepperoncinis
- ⅛ red onion thinly sliced
- 1 tablespoon red wine vinegar
- dash of salt and pepper
- 1-2 slices pepper jack cheese depending on size of bread, you want all of the chicken covered with cheese
- 2 tablespoon chimichurri homemade or store bought
Instructions
- Slice roll horizontally and toast.
- Spread spicy mayo on bottom piece of bread, then top with shredded chicken and pepper jack cheese.
- Place piece of bread with chicken and cheese in oven or microwave until cheese is melted.
- Mix the shredded lettuce, red onion, and pepperoncinis in a bowl. Toss with red wine vinegar. Salt and pepper to taste.
- Top sandwich with lettuce mixture.
- Spread chimichurri on the top slice of bread and close sandwich.
