    Pretzel Chocolate Chip Cookie and Caramel Ice Cream Sandwich

    There’s nothing better than a cool, creamy dessert on a hot day—unless it’s one that combines sweet, salty, chewy, and crunchy in every bite. These Pretzel Chocolate Chip Cookie and Caramel Ice Cream Sandwiches are the ultimate indulgent summer treat. Picture it: delicious chocolate chip cookies studded with crunchy pretzels with a layer of gooey caramel sauce sandwiching a generous scoop of vanilla ice cream. It’s like your favorite chocolate chip cookie ice cream sandwich from childhood but even better!

    These Pretzel Chocolate Chip Cookie and Caramel Ice Cream Sandwiches are a mouthful to say and a delicious mouthful to eat. Serve them at a summer BBQ, birthday, or at home on your couch for a delicious treat.

    Ingredients

    • Vanilla Ice Cream
    • Caramel sauce
    • Butter
    • Margarine
    • Granulated Sugar
    • Brown sugar
    • Eggs
    • Vanilla
    • All-purpose flour
    • Pretzels
    • Chocolate chips
    • Salt
    • Baking soda

    Directions

    For the cookies:

    1. Preheat oven to 350.
    2. Mix together the butter, margarine, sugar, eggs, and vanilla until completely mixed.
    3. Gradually beat in the flour, salt, and baking soda.
    4. Lastly, mix in the pretzels and chocolate chips just until evenly distributed.
    5. Bake for 8-10 min (If you want to add the whole pretzel on top, press onto the cookie about 2 min before they are done baking).

    To assemble the sandwiches:

    1. Let the cookies cool when done, and place in the freezer for at least 10 minutes to harden before assembling.
    2. Remove ice cream from freezer for at least 5 minutes to let soften.
    3. Once cookies have cooled, spread caramel sauce on the bottoms of two cookies. Then, place a scoop of vanilla ice cream on top of the caramel of one cookie. Place the other cookie (caramel side down) on top of the ice cream and press down until ice cream is about to reach the edge of the cookies. Repeat for each ice cream sandwich.
    4. Immediately wrap ice cream sandwiches in seran wrap or parchment paper. Place in freezer to let ice cream sandwiches fully freeze (they'll be very messy if you eat them right away). Then, remove and enjoy!

    Variations

    • Ice Cream - Swap the vanilla ice cream for caramel ice cream, coffee ice cream, or peanut butter for a delicious twist on this recipe.
    • Chocolate syrup - When adding the caramel, also add a drizzle of chocolate sauce for an extra chocolatey treat.

    FAQs

    Can I use a different type of ice cream?

    I’ve never made these with a different type of ice cream, so I can’t recommend anything else. But, if you have an ice cream you think will be good with it, knock yourself out! I chose vanilla ice cream for these because I didn’t want to overpower the flavor of the pretzel chocolate chip cookies and caramel. You definitely want to taste the cookie and caramel!

    Do I need to let the cookies cool before adding the caramel and ice cream?

    For the cookies

    • ½ cup softened butter 1 stick
    • ½ cup softened margarine 1 stick
    • 1 cup granulated sugar
    • 1 cup brown sugar
