Make a delicious blackberry lemon donut with a homemade blackberry glaze (the glaze is only 2 ingredients!) for a delicious baked good bursting with fresh blackberries.
This recipe is particularly popular in the summer because that's when blackberries are in season, but anytime you can find blackberries you can make this recipe!
This was inspired by my baked chai douts, because who says you can't have a summer donut?! If you like this recipe, you'll also love my blackberry lemon muffins (this donut recipe is pretty similar to the muffin recipe but with a few tweaks to give it a texture closer to a classic donut)!
Ingredients
- All-purpose flour
- Baking powder
- Salt
- Baking soda
- Granulated sugar
- Butter
- Egg
- Whole plain Greek yogurt
- Milk of choice
- Lemon
- Vanilla
- Blackberries
- Powdered sugar

Instructions
Combine all dry ingredients for donuts except sugar.
Separately, mix together the sugar, milk, yogurt, egg, butter, lemon juice, vanilla, and lemon zest.
Whisk the sugar mixture into the flour mixture until fully combined.
Fold in the blackberries gently.
Pipe batter into the wells of the donut baking pan.
Bake until lightly golden.
Dip donuts into the blackberry glaze and enjoy!
Hint: If you feel the glaze is too thick, add blackberry juice until you reach your desired texture.
Variations
- Raspberries or blueberries - If you aren't a fan of blackberries, this recipe is also great with raspberries or blueberries! I personally prefer the way that the sweet blackberries and tart lemons balance each other out, but the blackberries can easily be replaced with raspberries or blueberries in this recipe!

Storage
Store donuts in a single layer in an airtight container and refrigerate for up to 3 days.
Top tip
Don't over mix the batter! When mixing, mix just until combined then stop. This will keep the donuts from getting too dense and give you the perfect fluffy texture!
Blackberry Lemon Baked Donuts

Blackberry Lemon Donuts
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ cup granulated sugar
- ¼ cup plain, full fat greek yogurt
- ¼ cup milk of choice
- 1 egg
- 2 tablespoon butter melted
- 2 tablespoon lemon juice
- ½ tablespoon vanilla
- ½ teaspoon lemon zest
- ⅔ cup blackberries quartered of halved
Blackberry Glaze
- 1 cup powdered sugar
- 2 tablespoon blackberry juice
Instructions
For the donuts
- Preheat oven to 350F and spray donut baking pan with nonstick spray.
- In a large bowl, mix together the flour, baking powder, salt, and baking soda.
- In a medium bowl, whisk together the sugar, milk, yogurt, egg, butter, vanilla, lemon juice, and lemon zest.
- Slowly whisk the sugar mixture into the flour mixture until fully combined.
- Gently fold in the blackberries to the batter until evenly distributed.
- Put the batter in a piping bag or zip top bag.
- Pipe batter into each well (will make about 6 regular sized donuts).
- Bake for 8-10 minutes, until lightly golden.
- Remove from oven and transfer to cooling rack. Let completely cool before adding glaze.
For glazing
- Mix together the powdered sugar and blackberry juice in a small bowl, add more juice if you want it to be thinner.
- Dip top half of each donut into the glaze.
- Eat immediately or let glaze set!
