A delicious veggie sandwich because vegetables should be fun! Fresh vegetables, herbaceous chimichurri, spicy mayo, pickled onion, and creamy havarti cheese make the perfect veggie sandwich! Vegan option also available, see description of recipe for details.
I love making this sandwich in the warmer months. It's refreshing, filling, and packed with so much flavor!

Ingredients
- Personal size ciabatta roll or other sturdy bread
- Olive oil
- Chimichurri (homemade or store-bought)
- Spicy mayo*
- Fresh spinach
- Lemon
- Black pepper
- Shredded carrots
- Mini or regular cucumber
- Tomato
- Pickled onion (homemade or store-bought), can also use thinly sliced red onion
- Pepperoncinis
- Havarti cheese*
- Avocado
*To make a vegan version of this veggie sandwich, sub the havarti cheese and spicy mayo for your favorite vegan options

Instructions
Brush cut side of ciabatta with olive oil and grill or pan fry on medium heat cut-side down. (Can toast instead)
Toss chopped spinach, lemon, and black pepper together.
Stack spinach, carrots, and cucumber on sandwich.
Add tomato to sandwich.
Add havarti to sandwich.
Smash avocado onto cut side of bread to keep from sliding off when eating.
Close sandwich and enjoy!
Hint: If you have the time, I recommend grilling the bread instead of toasting! Grilling the bread with olive oil brings out a great flavor.
Substitutions
- Vegan - Sub the cheese and mayo for your favorite vegan substitutes.
- Gluten-free - use gluten free bread instead of ciabatta rolls
Storage
This veggie sandwich is definitely best when eaten right after making. That being said, I often make this sandwich to bring to work. The crispiness of the vegetables makes up for the lost crunch of the toasted bread! Just wrap tightly in saran wrap to keep together and refrigerate.
Top tip
I likes to mix in a small amount of chopped fresh basil into the spinach mixture when I happen to have it. It adds some extra flavor to the sandwich!
The Best Veggie Sandwich
Ingredients
- 1 personal size ciabatta roll or other sturdy bread
- olive oil
- chimichurri homemade or store-bought
- spicy mayo
- ½ cup loosely packed spinach chopped
- ¼ lemon juiced
- black pepper
- ¼ cup shredded carrots
- ½ mini cucumber thinly sliced (or ¼ of a regular cucumber)
- 2 slices tomato
- pickled onion homemade or store-bought, can also use thinly sliced red onion
- ⅛ cup pepperoncinis
- 1 slice havarti cheese
- ¼-1/2 avocado sliced
Instructions
- Cut ciabatta roll lengthwise, then brush the cut-side of each slice with olive oil. Grill or pan fry on medium heat (cut side down) until golden brown. (Can toast instead, but I prefer this)
- Toss chopped spinach, lemon, and dash of pepper together in a small bowl.
- Smear one slice of bread with a hearty helping of chimichurri and the other with spicy mayo.
- Spread avocado over one or both of the bread slices, smashing into the bread with the back of a fork (this keeps the avocado from sliding out when eating).
- Stack the spinach, carrots, cucumber, tomato, onion, pepperoncini, and havarti.
- Close sandwich and enjoy!
