If you’ve ever been to P.F. Chang’s, you know that their lettuce wraps are delicious. I had a craving for them a few weeks ago, and knew I needed to figure out how to make them. The only things I ever wanted to fix about them was the amount of spice (I always want more!) and a bit more crunch. So I added some extra heat to these, as well as some carrots for more crunch. These things are both optional, and you’ll love these either way! These are also great for meal prep, just keep the chicken mixture and lettuce cups separate until you’re ready to eat. Ready in under 20 minutes!

What ingredients do I need to make this?
- Ground chicken: I’ve seen people make this recipe with ground turkey, but I highly prefer the ground chicken in this recipe!
- Hoisin sauce: Fragrant, salty, and sweet! This sauce makes this dish what it is and you can find it in the “International” or “Asian” sections of most major grocery stores.
- White onion: Key to the flavor for this dish! You can also use yellow onion in a pinch.
- Carrots: This gives the dish a good crunch!
- Water chestnuts: With the texture of an Asian pear, these aquatic vegetables have a very mild flavor.
- Garlic: Fresh or pre-minced, the choice is yours!
- Soy sauce: I use low sodium, but feel free to use regular as well!
- Rice wine vinegar: This balances out the flavor of the dish with its sweet, acidic taste.
- Ginger: This gives these wraps the perfect kick!
- Garlic chili sauce: Add more or less to your spice preference.
- Green onion: Chop them up and add them toward the end of cooking!
- Head of romaine or butter lettuce: I prefer butter lettuce as this is how they are originally served, but either works!

They are typically in the “international” or “Asian” section of any major grocery store.
What percent fat of ground chicken should I use?
I typically use a 92% lean ground chicken. I find this chicken is harder to dry out than the 96% lean that stores usually also carry.

How do I make these?
1) In a pan on medium heat, cook the ground chicken until browned, breaking up as it cooks. Drain any excess fat before the next step.
2) Mix in the hoisin, onion, carrots, garlic, soy sauce, rice wine vinegar, ginger, and garlic chili paste. Stir occasionally until the onions become translucent.
3) Stir in the green onions and water chestnuts for 1-2 minutes, then remove from heat.
4) Scoop the chicken mixture into the leaves of lettuce. If you have extra, sprinkle some fresh green onion on top!
5) Serve them up and watch them disappear!

Ingredients
- 1 lb ground chicken
- ⅓ cup hoisin sauce
- 1 small white onion diced
- ½ cup carrots diced; optional for extra crunch
- 1 8 oz can water chestnuts drained and diced
- 4-6 garlic cloves minced
- 2 tablespoon soy sauce
- 2 tablespoon rice wine vinegar
- 1 tablespoon ginger grated
- 1 tablespoon garlic chili sauce optional
- 3 green onions sliced
- Head of romaine or butter lettuce
Instructions
