This recipe was inspired by my Healthier Buffalo Chicken Dip on this site, one of my favorite game day appetizers. You really can't go wrong with a buffalo chicken recipe!
Ingredients

- Chicken (breast or rotisserie chicken)
- Frank's Red Hot Buffalo sauce
- Hawaiian rolls
- Blue cheese
- Sliced Monterey Jack cheese
- Slaw mix
- Red onion
- Butter
- Apple cider vinegar
- Olive oil
- Salt
- Pepper
- Optional: pickles
See recipe card for quantities.
Instructions

- Step 1: If using chicken breast, place chicken breast and Buffalo sauce in a slow cooker and cook on low for 4 hours. Then use 2 forks to shred the chicken. If using rotisserie chicken, shred up the chicken and mix in a large bowl with Buffalo sauce. Then, mix in the blue cheese.

- Step 2: Preheat over to 400F. Cut Hawaiian rolls in half horizontally and place bottom half on parchment paper or foil lined baking sheet.

- Step 3: Layer sliced cheese on the bottom half of the rolls. Slightly overlap them to completely cover the bread.

- Step 4: Spread the chicken mixture on top of the cheese.

5. Step 5: Place the top half of the buns over the chicken. Brush the tops of the buns with butter and sprinkle with a pinch of salt. Bake until the tops of the buns are golden brown, about 10-12 minutes.

6. Step 6: Let cool for a few minutes, then remove the top half of the buns and spread slaw evenly over the chicken. Then add pickles if using.

7. Step 7: Replace top half of buns.
Hint: Make sure to layer the cheese over the bun so there is no empty space. This keeps the chicken from making the bottom of the buns soggy.
