Ginger Sesame Bok Choy

Ingredients
- 3 heads baby bok choy or 1 head regular bok choy
- 4-6 garlic cloves minced
- 1 tablespoon soy sauce regular or low sodium
- 2 teaspoon olive oil
- 1 teaspoon ginger grated
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- Red pepper flakes to taste
- Optional: sesame seeds for garnish
Instructions
- Mix together the soy sauce, sesame oil, red pepper flakes, and rice vinegar. Set aside.
- Heat the olive oil on a medium saucepan. Sauté the bok choy, ginger and garlic for 2-3 minutes.
- Add in the sauce, stirring and simmering for 2-3 more minutes, until bok choy is at your desired consistency.
- Remove from heat and garnish with sesame seeds if using. Serve.
