    Mediterranean Chicken Meatballs

    Make these healthy, easy, and delicious chicken meatballs! They're packed with flavor from fresh herbs and spices including dill, mint, oregano, garlic, and more.

    This recipe is perfect to eat right away or use for your protein meal prep! I often make these chicken meatballs for meal prep and bring them to work for an easy protein choice. I typically use them to top off rice and fresh vegetables with tzatziki or hummus

    This was inspired by my Thai chicken thighs on this site, because I wanted another easy, healthy, and most importantly not boring meal prep protein! Top it off with creamy tahini dressing for extra flavor.

    Ingredients

    • Ground chicken
    • Red onion
    • Lemon
    • Fresh dill
    • Fresh mint
    • Dried oregano
    • Dried basil
    • Garlic powder
    • Red pepper flakes
    • Pepper
    • Salt

    Instructions

    Combine all ingredients in a large bowl

    Mix until all ingredients evenly distributed

    Form into balls with your hands

    Place into oven at 400 fahrenheit

    Hint: Use ground chicken that is 93-96% lean for the perfect amount of moisture.

    How to serve

    • In a vegetable and rice bowl - This is how I typically eat it! I usually serve these on white rice, romaine, tomatoes, cucumbers, and then topped with tzatziki and feta!
    • On a salad - Use the meatballs to top off a delicious greek salad!
    • In a pita - Put these in a pita with romaine, feta, tomatoes, and tzatziki!
    • As an appetizer - Serve with a toothpick and a side of tzatziki.

    Variations

    • Spicy - add extra crushed red pepper flakes in the chicken mixture if you like heat!
    • Deluxe - add feta cheese into the meatball mixture for even more flavor!
    • Air fryer - Instead of putting these in the oven, put them in an air fryer at 400F for about 10 minutes (until they reach an internal temperature of 165F.

    Storage

    Store the cooked chicken meatballs in a sealed container in the fridge. Good for 2-3 days.

    After this, store in a freezer in a freezer safe container for up to one month. When ready to eat, defrost and reheat on the stovetop until hot.

    Make these mediterranean chicken meatballs (can also be made with turkey) packed with fresh herbs and spices for a fresh, delicious flavor.

    Ingredients
      

    • 1 lb ground chicken can also use ground turkey
    • ¼ medium red onion diced
    • ½ medium lemon zested
    • 1 tablespoon fresh dill minced
    • 1 tablespoon fresh mint minced
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • ½ teaspoon garlic powder
    • ½ teaspoon red pepper flakes
    • ½ teaspoon black pepper
    • ½ teaspoon salt

    Instructions
     

    • Preheat oven to 400F.
    • Mix together all ingredients until evenly distributed.
    • Roll mixture into about 16 balls (use a cookie scoop to make this easier).
    • Place the meatballs on a baking sheet so they don't touch.
    • Bake for about 20 minutes, until internal temperature reaches 165F.

    Food safety

    • Cook to a minimum temperature of 165 °F (74 °C)
    • Do not use the same utensils on cooked food, that previously touched raw meat
    • Wash hands after touching raw meat
