    Chai Spiced Granola

    My love for chai knows no bounds, and this recipe definitely reflects that. This granola is seriously so delicious and the perfect granola for fall and winter!

    Prep time: 10 minutes
    Cook time: 20 minutes
    Yields: 4 cups granola

    Ingredients:

    3 cups old-fashioned rolled oats
    1 cup halved pecans (or nut of choice)
    1 ½ tablespoon chai spice
    2 tablespoon coconut oil (liquid or melted)
    ⅓ cup honey
    ½ teaspoon vanilla

    Directions:

    Preheat oven to 350. Mix the oats, pecans, and chai spice until spice is evenly distributed over oats and nuts. In a separate bowl, mix together the oil, honey (I prefer to heat the honey first so it is easier to mix), and vanilla. Pour this mixture over the oat mixture and mix until evenly distributed. Then, pour onto a parchment paper lined baking sheet and spread evenly over sheet. Bake for about 20 minutes, until golden brown. Let cool and store in a dry area.
