- Do not overcook. I repeat: Do not overcook! This will dry out the shrimp and make it more tough. Cooking for one or two minutes on each side should do the trick!
- Wait until the pan is nice and hot to put the shrimp on. This also helps the blackened shrimp stay nice and juicy.
