    Pecan, Apple, and Pomegranate Spinach Salad

    This is the perfect fall side salad. It’s loaded with apple, candied pecans, pomegranate, and goat cheese (Leave out the goat cheese and use maple syrup instead of honey and it’s vegan!). It’s great for Thanksgiving, or any fall dinner. Enjoy and don’t forget to leave a review!

    What ingredients do I need to make this?

    • Spinach: Pick up some fresh spinach at the grocery store for this recipe.
    • Arugula: This adds a peppery flavor to the salad to balance out the spinach!
    • Apple: I prefer to use a sweet apple like fuji or pink lady apple, but if you prefer something more tart you cn go with a granny smith apple!
    • Red onion: You’ll want to slice these as thinly as possible so they don’t overpower the salad.
    • Pomegranate seeds: Buy a whole pomegranate and get the seeds out yourself or buy the seeds so you don’t have to do the extra work. Up to you!
    • Candied pecans: You can use homemade or store bought! Both work great.
    • Goat cheese: I love goat cheese and prefer it on this salad, but if you don’t like it you can replace it with feta. Or you can leave the cheese out all together to make this recipe dairy free and vegan!
    • Apple cider vinegar
    • Olive oil
    • Lemon
    • Maple syrup or honey
    • Dijon mustard

    Can I use something besides goat cheese?

    If you still want cheese in the salad but you’re not a fan of goat cheese, replace it with feta! It changes the overall flavor but it’s still delicious. Or, you can leave out the cheese altogether to make it dairy free/vegan.

    How do I make this salad?

    • Toss the salad ingredients together to distribute the ingredients evenly.
    • Mix the dressing ingredients together.
    • Toss the dressing in the salad.
    • Serve and enjoy!

    Where can I find candied pecans?

    You can find them in most grocery stores (especially in fall and winter) or you can make them homemade.

    Ingredients
      

    Salad

    • 2 cups fresh spinach packed
    • 2 cups arugula packed
    • ½ large medium apple (I prefer fuji in this), thinly sliced or diced into ½ inch cubes
    • ⅓ cup thinly sliced red onion
    • ½ cup pomegranate seeds
    • ¼-1/2 cup candied pecans homemade or store bought
    • ¼ cup crumbled goat cheese

    Dressing

    • 1 tablespoon apple cider vinegar
    • 1 tablespoon olive oil
    • ¼ lemon juiced
    • ½ teaspoon maple syrup or honey
    • ½ teaspoon dijon mustard

    Instructions
     

    • Toss together salad ingredients.
    • Mix together the dressing ingredients, and then mix in with salad.
    • Serve and enjoy!
