If you’re looking for a good summer appetizer, look no further. This little appetizer was made up after making my peach prosciutto pizza and having these ingredients leftover (no food waste in this house!). So, if you plan accordingly you can make both of these amazing recipe back to back 😉 These are cool, crisp, delicious, and packed with flavor. The creamy goat cheese and salty prosciutto work so well with the sweet and juicy peaches. Plus, the fresh taste of basil gives it that extra pop to make anyone’s mouth water! What do I need to make this recipe?
- Peaches
- Goat cheese
- Prosciutto
- Basil
- Optional for topping: honey, spicy honey, or balsamic glaze.
Can I use something other than goat cheese?
Ok, ok. I know not everyone is as obsessed with goat cheese as I am (I’m not saying you’re wrong, but you are). You can definitely use a slice of fresh mozzarella for these. It won’t have the same flavor, but they will be just as delicious!
….Hm, I wonder if I like the peach and basil combo? (But seriously, I could make a million more recipes with this combo, it’s fucking delicious.)
Prosciutto Basil Wrapped Peaches
Ingredients
- 4 peaches cut into 4-6 slices
- 4 oz goat cheese
- 4 thin slices prosciutto
- 16-24 basil leaves 1 per peach slice
- Optional: Honey spicy honey, or balsamic glaze for topping
Instructions
- Slice peaches into 6 pieces, if using smaller peaches cut them into 4 pieces.
- Evenly distribute goat cheese to peach slices, lightly pressing goat cheese onto peach.
- Press basil leaves onto goat cheese, then wrap peach with prosciutto (Enough to cover majority of peach).
- If using topping, lightly drizzle on top.
- Serve immediately or within a couple hours (refrigerate prior to serving)!
